Victoria Sponge

Simple, classic, we stan a basic queen who knows what she wants.

Ingredients

  • 200g Self-Raising Flour
  • 200g Caster Sugar
  • 200g Butter
  • 4 Medium Eggs
  • 1 tsp Vanilla Extract
  • Strawberry Jam
  • Double Cream

Instructions

  1. Throw the butter & sugar together & mix
  2. Add the eggs & vanilla extract
  3. Fold in the flour
  4. Separate mixture into two even sized cake tins
  5. Bake in preheated 180c oven for 20 minutes (or until a skewer comes out clean)
  6. Whip the double cream to stiff peaks
  7. Once cooled, spread on the cream & jam to the tops of one of the sponges
  8. Sandwich together and decorate with fruit/sprinkle icing sugar
