Victoria Sponge

Information
Simple, classic, we stan a basic queen who knows what she wants.
Ingredients
- 200g Self-Raising Flour
- 200g Caster Sugar
- 200g Butter
- 4 Medium Eggs
- 1 tsp Vanilla Extract
- Strawberry Jam
- Double Cream
Instructions
- Throw the butter & sugar together & mix
- Add the eggs & vanilla extract
- Fold in the flour
- Separate mixture into two even sized cake tins
- Bake in preheated 180c oven for 20 minutes (or until a skewer comes out clean)
- Whip the double cream to stiff peaks
- Once cooled, spread on the cream & jam to the tops of one of the sponges
- Sandwich together and decorate with fruit/sprinkle icing sugar
